Winery
It has been our dream, since we first bought the orchard in 2001, to make alcoholic beverages using our 34 varieties of apples and other fruit: pears, plums, cherries, raspberries, gooseberries, currants and grape.
We have studied different winemaking processes and visited a
number of cider houses and wineries in the provinces of Québec
and Ontario. As we learn the rudiments of the trade, we are
guided by a consultant in winemaking. What exciting work, exploring
the chemistry of fermentation!
